Secret: I used to think jelly shots were lame. Like a cranky old curmudgeon, I was literally like, “these newfangled Pinteresty recipes. Who ever actually makes these crazy things anyway?”
Of course, I got my granny panties in a bundle because I’d never tried them.
And lawwwd, honey. Jelly Shots aren’t a thing to complain about. They’re a thing to celebrate.
So easy.
So quick.
So cute.
So tipsy.
And this recipe is the finest way to welcome fall into your bloodstream. Your favorite coffee shot, caramel macchiato, turned into a triple-layer boozy treat in no time at all. Here’s how.
Start with caramel vodka. Some hot coffee or espresso. Unflavored gelatin. Sugar. Cream. It’s seriously that simple.
Now, just follow the recipe. You’ll whisk together Layer 1. It starts light, so it has an abundance of sweet cream all whisked in there.
Pop it in the fridge and let it set.
Then whisk together Layer 2. Easy! Fridge, set. Then Layer 3 and set.
Before serving, top it all with a bit of whipping cream. (Make your own if you have the time -- makes all the diff!)
And with that ... you have a whole batch of jelly shots just waiting to be spooned into your life.

Ingredients
- 1 1/2 cups hot brewed dark roast coffee or espresso, divided
- 6 tablespoons sugar, divided
- 3 envelopes plain gelatin
- 3/4 cup caramel vodka, divided
- 1/2 cup cream, divided (for jello shots)
- 1/2 cup heavy whipping cream, whipped, or canned whipped cream (for topping)
- 3 tablespoons caramel ice cream topping
- 1/2 teaspoon cinnamon

Step1In a medium bowl, whisk together 1/4 cup hot coffee, 2 tablespoons sugar, 1 packet of gelatin, and 1/4 cup caramel vodka. Whisk together until gelatin is fully dissolved. Whisk in 5 tablespoons of cream. Pour into the bottoms of 10 to 12 plastic mini espresso cups. Refrigerate until firm.

Step2In a medium bowl, whisk together 1/2 cup hot coffee, 2 tablespoons sugar, 1 packet of gelatin, and 1/4 cup caramel vodka. Whisk together until gelatin is fully dissolved. Whisk in 3 tablespoons cream. Pour on top of the first layer in the mini espresso plastic cups. Refrigerate until firm.

Step3In a medium bowl, whisk together 1/2 cup hot coffee, 2 tablespoons sugar, 1 packet of gelatin, and 1/4 cup caramel vodka. Whisk together until gelatin is fully dissolved. Whisk in 1 tablespoon cream. Pour on top of the second layer in the mini espresso plastic cups. Refrigerate until firm.
