Delicious parfaits that are our very favorite quick breakfast are full of fruit, protein, and whole grains!

  • Happy New Year!  Like many of us, I’ve made a resolution this year to make sure I feed my family (and myself!) more balanced, healthful meals.  I’m really making an effort to have more servings of fresh produce and whole grains with each meal. 

    Mornings are often our busiest time of day.  I’ll have a child working on unfinished homework, someone looking for a shoe, another person crying because of a bad hair day…you get the idea.  And, to be honest, I’m not really a morning person, so I need delicious no-fuss breakfasts that I can make in a snap. 

    So, sticking with my New Year’s resolution, I whipped up these Fruit & Grain Parfaits, and they were an instant favorite at our house!  I’m glad that I can share them with you and know you’ll love them for a quick and delicious on-the-go breakfast. 

    My kids thought they were getting some kind of “treat” for breakfast, which won me serious Mom-is-awesome points!  So, they ran off to school with big smiles, and I felt good about the balanced breakfast they just ate.  You can change up the flavors of the parfaits, but we really loved the peach-pear combo with Yoplait Thick & Creamy Light Cinnamon Roll yogurt.  YUM! 

    The Crunchy Almond Oatmeal Crisp provides the perfect crunch along with a healthy serving of whole grains and other nutrients.  These get requested every morning in our house and I’m happy to have a quick breakfast that I feel great about!

    So, grab yourself some Yoplait and Crunchy Almond Oatmeal Crisp and let’s get going! 

    Spread half of your yogurt cup into a bowl or large parfait dish…

    Add ¼ cup each chopped pears and peaches.  Tip: Since peaches are sometimes hard to find in winter, grab a bag of frozen peach slices, thaw, and chop.  They’re a great substitute.

    Top with 1/4 cup Crunchy Almond Oatmeal Crisp.

    Repeat layers with remaining yogurt and more fruit & Oatmeal Crisp.  Serve immediately. Thanks to our new favorite breakfast, we’re on our way to a more healthful New Year!

Fruit and Grain Parfaits

Ingredients

  • Cinnamon, dash optional
  • 2 cups Crunchy Almond Oatmeal Crisp cereal
  • 2 medium peaches, chopped
  • 4 containers (6 oz) Yoplait® Light Thick & Creamy cinnamon roll yogurt
  • 2 medium pears, chopped

Instructions

  • Step 
    1
    Spoon one half of each yogurt container into four bowls or large parfait dishes.

    Top each with 1/4 cup chopped pears and peaches.

    Sprinkle 1/4 cup Oatmeal Crisp on top of pears and peaches.

    Repeat layers with the rest of the yogurt, fruit, and oatmeal crisp. Garnish with a dash of cinnamon, if desired. Serve immediately.
