These easy Spicy Chicken Bites make a great party appetizer!

  • This here mess is some serious business. Not serious as in how hard it is to make, because, hi, do you know me at all? Shortcut Sally. But serious as in how incredible it is to either a) bite into or b) pull apart these lil' bites of seriousness. Serious. They're perfect on so many levels. All the after-school snack levels. All the lock yourself in the bathroom with a platter of these and a bottle of prosecco levels. All the levels. Just little Pillsbury crescent roll ball thingies stuffed with chopped chicken, green chiles, lil' bit of mayo, taco seasoning, cilantro and LOTS OF CHEESE. Sorry to scream. I mentioned how serious these are, right? Dip in some mayo/lime juice/taco seasoning that you made while you were crying for these to finish baking.

Ingredients

  • 6 tablespoons mayonnaise, divided
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 2 tablespoons from 1 container (6.25 oz) Old El Paso™ Original Taco Seasoning Mix, divided
  • 1 rotisserie chicken, shredded and chopped
  • 1/2 cup chopped cilantro leaves
  • 1 1/2 cups shredded cheddar cheese
  • 1 pinch salt
  • 2 cans (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)
  • 2 teaspoons fresh lime juice

Instructions

    Preheat oven to 375°F. In a large bowl, whisk together 3 tablespoons mayonnaise, the green chiles and 1 tablespoon of taco seasoning. Add the chicken to the bowl and stir to combine.

    Add the cilantro and cheese and stir to combine. Season with a pinch of salt.

    Roll out the crescent roll dough on a baking sheet. Place a meatball-sized dollop at the corner of each dough triangle. Pull the dough around the mix, and pinch to seal.

    Continue with the remaining crescent rolls and bake on an ungreased baking sheet for about 15 minutes, or until golden brown.

    In the meantime, whisk together the remaining mayo, lime juice and taco seasoning. Serve chicken bites with this mayo-lime dipping sauce.
