All buffoonery aside, on a scale from 1-10 reflecting just how much I would WITHER AWAY without this classic holiday appetizer, sausage balls have to be rated 4,269. At least. I mean, come on: spicy sausage for days, 14 truckloads of cheddar cheese, puffy Bisquick nibblets all in MINI BALL FORM? Yes. Just yes. I added scallions, a pinch of cayenne and fresh cilantro to up my own ante. UGH, it almost makes me mad to think about the greatness. AND I'm about to lose the battle on making a joke, so we better get to get the recipe! You know what? Just make 2 batches. One for your party, and one for you. Dip it in the sauce. Double dip. I won't tell. These have a kick, so you've been warned. You should also know you will lose all sense of balance in your life after one bite. And it will rule.

Scallion and Cilantro Sausage Balls with a Chipotle Lime Dipping Sauce

Ingredients

  • 1 lb hot Italian sausage
  • 8 oz block of cheddar cheese, grated
  • 2 cups Bisquick™ Original baking mix
  • 2 whole eggs
  • 1/2 cup sliced scallions
  • 1/2 cup roughly chopped cilantro
  • 1 small pinch cayenne pepper
  • 1 cup mayonnaise (I used canola based)
  • 2 whole chipotle peppers (from a can)
  • 2 tablespoons adobo sauce (from the can)
  • 2 tablespoons fresh lime juice

Instructions

  • Step

    Dump the sausage, cheese, baking mix, eggs, scallions, cilantro and cayenne pepper into a large bowl. Mix with hands until fully combined.

    Using hands, roll mixture into 1-inch balls and arrange them on a foil-lined baking sheet. Put into a 350°F preheated oven and bake for 18 to 20 minutes. Let cool 2 minutes before peeling them away from the foil.

    For the dipping sauce: In a food processor combine the mayo, 2 chipotle peppers, the adobo sauce and lime juice. Blitz until fully combined and smooth.

    Serve sausage balls with dipping sauce.
