    But will it? Here in Florida it’s rainy season, which means we can go a week or two without seeing the sun. The tropical storms are always dancing around the Atlantic and threatening to land on our turf.

    For a mom with four active kids, rainy days are torturous. We love being outdoors so when we’re stuck inside all day, it’s time to get creative.

    These Summer Sunshine Cookies are a great rainy day activity to brighten your day and experience the sun in a whole new way. But these cookies aren’t only sunny on the outside; they have a little hint of lemon zest in the frosting for a bright and sunny bite.

    Since the kids are helping, make it easy by starting off with a Betty Crocker Sugar Cookie Mix. Roll out your dough and cut it into circles for your sun, or if you have a sun shaped cookie cutter you can use that as well.

    Once the cookies have cooled, make your frosting. I like to microwave mine for a couple of seconds so that it makes more of a glaze, which looks better when you’re going for a smooth surface for the sun.

    Once the frosting has slightly set, press your candy corns all around the outside to make the cheerful rays.

    Rainy days don’t have to mean that your whole day is gloomy.

Ingredients

  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix (and ingredients called for on pouch)
  • 1 (16 ounce) container vanilla frosting
  • 1 teaspoon lemon zest
  • Yellow food coloring
  • Candy corns

Instructions

    Prepare sugar cookie mix. Roll out sugar cookies and cut into 2-inch circles. Bake according to package directions.

    Once cookies have cooled, microwave the frosting in a bowl for 10-15 seconds or less depending on your microwave. You just want the frosting a little thinner. Add some yellow food coloring and stir in your lemon zest.

    Place cookies on a rack and pour frosting over cookies to create a thin layer. Let frosting slightly set then place candy corns all around the cookie with the white tip facing out like the suns rays.
