    With this outrageously easy version, why make banana cream pie the old-fashioned way evah again?

    The secret weapon is Nature Valley Granola Thins. Crunch 'em up and they make a great base for this banana dessert. (I used my mini food processor and got 'er done in seconds.)

    No butter, no mixing, no pressing into a pie pan. Crunch 'em up. That's it.

    Then slice up yer naners:

    And whip up some cream with a bit o' sugar. Nom:

    And the coup d'etat -- cooked vanilla pudding (from a box, of course), still warm and right outta the pan. Nom twice.

    As soon as that pudding's ready, get 4 plates and 4 mouths ready, then assemble the desserts in seconds flat. Ready?

Ingredients

  • 1 box (10 squares) Nature Valley™ granola thins
  • 2 perfectly ripe bananas
  • 2 cups whipping cream
  • 1/4 cup powdered sugar
  • 1 box (3.4 oz.) cook-and-serve vanilla pudding mix (not instant!)
  • 3 teaspoon vanilla, divided
  • 2 cups milk (for pudding)
  • Warm caramel sauce for garnish, if desired (not shown)

Instructions

    In a small food processor or blender, crush granola thins into crumbs. (Can be done by hand.) Set aside.

    Slice 2 bananas. Place in a bowl and cover with plastic wrap. Set aside.

    Whip 2 cups whipping cream with 1/4 cup powdered sugar and 1 tsp. vanilla until stiff peaks form. Transfer to chilled bowl, cover and refrigerate until ready to serve.

    In a small saucepan, stir vanilla pudding mix with 2 cups milk and 2 tsp. vanilla. Bring to a boil, stirring constantly so mixture doesn't scorch. Remove from heat.

    Assemble desserts immediately so pudding is still warm. On each of 4 small dessert plates, layer in this order: 1/4 cup granola crumbs, 1/4 of the banana slices, 1/4 of the warm vanilla pudding, and a large scoop of whipped cream. Sprinkle top with granola crumbs and serve immediately.

    Additional garnish, if desired: Drizzle with warm caramel sauce.
