A healthier version of the chocolate brownie. These are still rich in flavor, but have two extra special ingredients in them to help meet your daily vegetable and fruit intake... beets and applesauce!

It’s January and we’re all striving to add more vegetables to our diet and focus on living a healthy lifestyle. So start your year off right with this awesome beet brownie recipe! With my husband growing up in an Italian family, we have a hard time giving up those sweets. I just love a good, rich brownie with a glass of milk! One thing you always hear about great brownies is that the more butter and “bad stuff” you add to them, the better tasting they are. But lucky for me (and you!) there are quick, nutritious alternatives to give your brownies a healthy makeover! Not only do these brownies have chopped beets in them, but they’re made with applesauce as well. If you have children, these are a perfect treat that will not only satisfy their sweet tooth, but give them a little dose of vegetables. And guess what? They probably won’t even notice! The brownies actually still have a fudgy taste to them and are quite addictive! So go ahead and try these super easy and guilt-free brownies. I think you’ll be surprised. Ingredients

  • 3/4 cup canned beets, finely chopped with beet juice
  • 2 eggs
  • 1/4 cup water
  • 1/4 cup vegetable oil
  • 1/4 cup apple sauce
  • 1 box brownie mix

Instructions

  • Step

    Preheat the oven to 350°F. Finely chop the canned beets and place 3/4 cup in a small bowl. Add a few tablespoons of the beet juice.

    Add all of the ingredients in a large mixing bowl and blend until incorporated.

    Bake in a greased 9x9x3 square pan for 20 minutes.
