A spiced up apple cake for the 21 and over crowd.

    You can just feel it in the air – summer slowly coming to an end. Ease your way into autumn by making Boozy Apple Cakes. These rum cakes are obviously for the 21 and over crowd, but can easily be made for the under 21 crowd by just omitting the alcohol.

    Bonus! Your entire house will smell like fall – before, during, and after – baking up these cute little cakes!

    Grab your ingredients and let’s get ready to ring in autumn! Grease eight small ramekins and set aside.

    Slice the apples into thin slices with a mandolin or paring knife.

    Put them in a small pot.

    Then add the sugar, cinnamon, and butter. Cook on medium heat until the butter and sugars have dissolved and the apples are soft and tender. If you are using the booze, this is when you add it! Cook for 10 minutes more, then remove from heat and set aside.

    Let’s mix up the Betty Crocker spice cake mix!

    Mix, mix, mix!

    Using a ¼ cup measuring scoop, fill the bottom of the ramekins.

    Add the boozy apple slice mixture on top of the batter.

    Cover the apples with more batter. Continue to spread all the batter between the ramekins. Finish each with an apple slice on top. Place the ramekins on a baking sheet and pop in the oven to bake.

    Once done, sprinkle sugar on the top apple slice and use a kitchen torch to crystalize the sugar.

Ingredients

  • 1 box Betty Crocker™ Delights Super Moist™ Spice Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 2 granny smith apples
  • 1/4 cup light rum
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup sugar
  • 2 tablespoon butter

    Preheat oven to 375°F and grease eight small ramekins. Set aside.

    Slice apples into thin slices with a mandolin or paring knife and put them in a small pot with the butter, sugar, and ground cinnamon.

    On medium heat, cook the butter, sugar, ground cinnamon and apples together until apple slices are soft and tender. Add in the rum and cook for 10 minutes more. Remove from heat and set aside.

    In a large bowl, combine all the ingredients for the cake mix and whisk together.

    Using a 1/4 cup measuring cup, spoon the first layer of the batter into the prepared ramekins.

    Carefully put apple slices on top of the first layer of batter. Then with the measuring cup, cover the sliced apples with more batter. Continue between all the ramekins, until all the batter has been used up. Place an apple slice on the top layer.

    Bake for 30 minutes or until a toothpick inserted in the middle comes out clean.

    Let cool for 10 minutes, then sprinkle granulated sugar on top of the apple slice. Using a kitchen torch, melt the sugar until it's golden brown. Repeat with the other cakes.
