Bran Date Quick Bread

Ingredients
- 2 cups chopped dates
- 2 cups boiling water
- 2 eggs
- 3/4 cup brown sugar
- 2 cups whole-wheat flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups bran
- 1 teaspoon pure vanilla extract
- 1 cup chopped pecans
Instructions

Step1Preheat oven to 350°F.

Step2Pour 2 cups boiling water over chopped dates.

Step3In a separate bowl, beat lightly 2 eggs.

Step4Add brown sugar to egg mixture slowly, beating constantly.

Step5When these ingredients are creamy, add 1 cup whole-wheat flour, baking powder and baking soda.

Step6Add half the date mixture and the rest of the whole-wheat flour, bran, and vanilla.

Step7Add the remaining date mixture and fold in chopped pecans.

Step8Place the dough in lightly-greased loaf pans. Bake for about 1 hour.
