  • One of the first things to go out the window when we’re trying to budget is having friends over for dinner. Let’s face it, every time I entertain, I end up blowing a chunk of money on groceries and can’t help but think of all of the other things I could have spent that money on. But can you really put a price on good food and good friends?

    Since I don’t plan on giving up any of my friendships anytime soon, I found a way to keep my resolutions and the relationships with my friends at the same time. I’m always looking for easy and inexpensive dinners to entertain my friends, and I found a keeper in this Chicken a la King recipe!

    It’s a meal that’s wallet friendly but impressive at the same time. This dish has diced chicken in a cream sauce with mushrooms, onions, and peppers. It can be served over rice, egg noodles, toast or in this case, a big fat biscuit.

Chicken A La King

Ingredients

  • 1/2 cup butter
  • 1/2 cup green bell pepper, chopped finely
  • 1/2 cup white onion, chopped finely
  • 1/2 cup flour
  • 1/2 teaspoon minced garlic
  • 2 (4 ounce) cans of mushrooms with juice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 5 cups cooked chicken, shredded or cubed
  • salt and pepper to taste

Instructions

    Melt butter in a large saucepan. Add bell pepper and onion and sautee until soft.

    Add garlic and cook for a minute.

    Add flour to mixture and cook until bubbly.

    Add mushrooms with juice and chicken broth and bring to a boil. Cook for 5 minutes or until thick.

    Reduce heat. Stir in chicken and cream and add salt and pepper to taste.

    Serve over toast, egg noodles, or Pilsbury™ Grand biscuits.
