We’ve given this Curry Chicken Pasta Salad an international update with Thai flavors of curry, pineapple, and coconut. This dish comes together in a snap, but you can save even more time by using leftover chicken or rotisserie chicken. Not only is it a huge crowd-pleaser, this easy salad is a great make-ahead dish for your next party. In fact, it’s even better the next day when the flavors have time to sit and combine. My favorite thing about this salad is that it’s SO versatile! You can: Serve it as-is and watch it disappear Turn it into appetizers by placing spoonfuls in premade baked phyllo cups (found in the freezer aisle of your local grocery store) Grab some fresh croissants and serve it as flavorful sandwiches Spoon heaping tablespoons onto large romaine lettuce leaves and roll into lettuce wraps I love it when you find a dish that can be served so many ways and is always a huge crowd pleaser! Even my kids who are not big curry fans gobbled up this dish. It’s a perfect blend of sweet, soft, crunchy, and hint of spice. Give it a try and I think it will be a favorite at your house, too!

Ingredients

  • 1 lb cooked cubed chicken
  • 9 oz bow tie pasta
  • 1 cup pineapple tidbits
  • 2 green onions, chopped
  • 3/4 cup shredded coconut
  • 1/2 medium red bell pepper, chopped
  • 1/2 medium yellow pepper, chopped
  • 1/2 cup cashew pieces
  • 3/4 cup green grapes, sliced in half
  • 8 ounces cream cheese
  • 1/2 cup light mayonnaise
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 1/2 tablespoons curry powder

Instructions

    Cook pasta according to package directions. Drain and rinse with cold water.

    While pasta is cooking, mix cream cheese, mayonnaise, dijon mustard, lemon juice and curry powder in a medium bowl. Set aside.

    Mix all remaining ingredients in a large bowl. Add dressing and stir well.

    Place in refrigerator for at least 10 minutes. Serve cold.
