Some have celery others have nuts. Some are creamy, while others are more on the lighter side of things. So, which one do you choose when you're bringing for the Memorial Day picnic potluck? Which one will everyone LOVE, you know, the "going back for thirds, not seconds" kind of love? We think we have your answer – You’ve gotta give our Chicken Poppy Seed Pasta Salad a go. First, it’s simple to make and can be made ahead of time (holiday weekend win!). Second, there aren’t any ingredients that really bite back – no onions, no pickles and definitely no capers. Third, we built it from ingredients that we know most people really enjoy like sweet red grapes, refreshing crisp cucumber and -- to make even the skeptics buckle -- some tender roasted chicken. The dressing? We kept it simple but special with our homemade poppy seed dressing. No goopy mayo needed -- another win for warm-weather gatherings. To make it, you’ll need sugar, mustard powder, apple cider vinegar, olive oil and poppy seeds. We make our dressing on the sweeter side, but feel free to play around with the amount of sugar for one that’s a little less sweet and to your taste. This easy salad will be your new summer favourite!

Chicken Poppy Seed Pasta Salad

Ingredients

  • 1 package (16 oz) pasta (such as shells, penne or rotini)
  • 1 1/2 cups cubed cooked chicken
  • 1 whole Hothouse cucumber, chopped
  • 1 cup red grapes, halved
  • 1/4 cup sugar
  • 3/4 teaspoon mustard powder
  • 1/2 teaspoon salt
  • 2 tablespoons apple cider vinegar
  • 1/3 cup olive oil
  • 1 tablespoon poppy seeds

Instructions

    Bring a large pot of salted water to a boil then cook pasta according to package directions. Drain then rinse under cold water until cool.

    Add pasta, chicken, cucumber and grapes to a bowl.

    Make the dressing by whisking together the sugar, mustard powder, salt, vinegar, olive oil and poppy seeds until blended. Pour dressing over pasta and toss.

    Cover and refrigerate at least 15 minutes. Serve.
