  • Fresh, juicy summer berries are delicious – especially in a bar made with pie crust, chocolate, and sugar cookie crumble! These pie bars are easy to make and sinfully delicious. Growing up, my mama always made me a raspberry pie at Christmas. She still does, actually. Mostly because if she doesn’t, I will throw myself on the floor like a two-year-old and have a tantrum. Christmas brings out the baby in me. Anyway, I’m not here to talk about Christmas. I’m here to talk about raspberries! Sweet, tart, juicy red raspberries. I buy them as often as possible and always plan to bake with them. Then I end up standing over the sink, rinsing them one by one, and popping them in my mouth. I don’t rinse them all at once, because I’m in denial that I’m going to actually eat the whole package. Denial, it’s a beautiful thing. But, you guys! Look! I managed to set aside enough of my berries to bake with and holy heck, these rich chocolate bars, studded with juicy berries, are so perfect for summer. The sweet chocolate, the tart berries, the sugar cookie crumble, and the flaky pie crust ... I’m in love. Think my mama will make me this for Christmas instead of the usual pie? Let’s do this.

Ingredients

  • 1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crust (2 count)
  • 14 oz sweetened condensed milk
  • 2 cups dark chocolate chips, divided
  • 1 cup red raspberries
  • 1 tablespoon granulated sugar
  • 4 oz from 1 roll (16.5 oz) refrigerated Pillsbury™ Sugar Cookie Dough

    Begin by gathering your ingredients.

    Preheat the oven to 450°F. Line a 9x13-inch baking dish with foil and spray with non-stick cooking spray.

    Unroll the pie crust and fit it in the prepared pan as best you can. Use a knife to trim the edges and fit the scraps to cover the bottom of the pan entirely with the crust. Bake crust for 7 to 9 minutes or until light brown. Reduce oven temperature to 350°F.

    In a small saucepan, heat the sweetened condensed milk over medium heat. Stir in 1 cup of the chocolate chips and continue stirring until fully melted.

    Spread the melted chocolate over the prepared pie crust.

    In a small bowl, toss the raspberries with the sugar. Sprinkle the berries over the chocolate. Use your fingers to crumble the sugar cookie dough over the berries as evenly as possible.

    Bake for 28 minutes. Remove from the oven and sprinkle the remaining 1-cup of chocolate chips over the bars and return to the oven for 2 more minutes.
