  • We know this eggless cookie dough won't be seeing the inside of an oven anytime soon, and there’s no shame in that. We made this version without eggs so that it’s safe to eat “raw”—in fact, it’s not even meant to be baked. After all, the best part of making cookies is sneaking little bites of gooey dough, again and again. We’re so glad to live in a world where this is not only accepted but encouraged.

Ingredients

  • 1/4 cup (1/2 stick) unsalted butter, softened
  • 2/3 cup packed light brown sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons milk
  • 1/2 teaspoon salt
  • 1 cup oat flour (available at most supermarkets, or see instructions in tips section)
  • 1/2 cup chocolate chips

Instructions

    In a medium-sized mixing bowl, cream together the butter and brown sugar using a hand mixer or a wooden spoon until the mixture is well blended. Add in the vanilla, milk and salt, and mix until just combined.

    Add in the oat flour and stir until just combined. Fold in the chocolate chips. Eat immediately, or chill until cold, then enjoy.
