  • These strawberry cake donuts are a treat for the gluten-free eaters among us. Or for any of us. When gluten-free donuts started making an appearance in the form of fake donuts, I went a little ... well ... nutty. After all, as a new g-free eater, I was all sorts of sad to lose my favorite pastries. Unsure I could live without cakes and cupcakes and ... oh! The mini donut. What is life without the mini donut?! Turns out, we gluten-free eaters will never have to find out. Because not only are there now faux donuts for sale, but we’ve officially hacked the recipe so you can make them at home. Sometimes when I start trying to recreate a popular recipe, I get a little overwhelmed. This one of those recipes. I worried it would be hard to make, and too much work to really be worth it. Imagine my surprise to discover that Betty Crocker gluten-free cake mix not only makes it as easy as 1-2-3, but it also turns out a batch of superdelicious g-free donuts. Ready to make these bad boys? Watch closely! They come out of the oven quick! First, you'll need one of these donut pans. Who knew? Bake and prepare to glaze. The glaze is so great. You just blend strawberries with powdered sugar in a blender. Then, voila! A delicious icing, ready to dip and drizzle all over your cake donuts. And now only one step is left. Gluten-Free Cake Donuts with Strawberry Glaze

Ingredients

  • 1 box (15 oz) Betty Crocker™ Gluten Free Yellow Cake Mix
  • 2 eggs
  • 1 stick butter, softened
  • 1/3 cup strawberry fruit spread
  • 8 large ripe strawberries (stem removed)
  • 4 cups powdered sugar
  • 1/2 tablespoon - free or pure vanilla

Instructions

    Preheat oven to 350°F. In a mixing bowl or stand mixer, beat together Betty Crocker™ cake mix, eggs, butter and fruit spread. Spoon into a lightly greased donut pan. Bake for 8-12 minutes for mini donut pans (or 10-16 minutes for large donut pans). When the donuts spring back lightly to the touch, remove and cool slightly before removing from the pan.

    In a blender, mix strawberries until coarsely chopped. Add powdered sugar and vanilla. Blend until a syrup-like frosting forms. If needed, add 1-2 tablespoons of water to thin the frosting. Pour into a large bowl.

    Dip warm donuts into the strawberry icing. Use a spoon to drizzle the icing to fill in all over. Place donuts on a cooling rack until icing sets, about 10 minutes. Enjoy!
