    The only running I do in the summer is through sprinklers with the neighbor kids. I won’t be bringing home a gold medal anytime soon. In fact, I am pretty sure the only way I am going to get a gold medal is if I make one. So … I did.

    Not just any medal mind you, Gold Medal Jelly Shots to be exact. They won’t make you a better athlete … in fact they will probably make you a worse athlete but they will definitely spice things up as you watch the excitement from London!

    For those unfamiliar with Goldschlager, it’s a Cinnamon Schnapps that is mostly known not so much for the liquor itself, but for what comes floating around in that liquor … real flakes of gold! See? You really can bring home the gold. Combined with apple juice, for a nice apple cinnamon pairing, these will add fun to any of your Olympic Festivities.

    If you have round molds, perfect. If you’re like me, you might have to improvise. I used mini ramekin dishes that I had to make this batch.

    One method that did not work for me was trying to make them in a rectangular dish and then cutting them out into round shapes using cookie cutters. That was an epic fail, to say the least. If you can’t find anything round, you can always go the standard route and use plastic cups with lids. They won’t look as cute, but after a few I don’t think anyone will mind.

Gold Medal Jello Shots

Ingredients

  • 1 packet unflavored gelatin
  • 1 cup apple juice
  • 1 cup Goldschlager™ cinnamon schnapps

Instructions

  • Step 
    1
    In a medium bowl add Goldschlager™ and sprinkle the gelatin over the schnapps to let bloom. Let stand for 5 minutes.

    In a small saucepan, heat the cup of apple juice until it is boiling.

    Remove from heat and add boiling apple juice to bowl with gelatin and schnapps. Whisk until the gelatin is fully dissolved. Let mixture come to room temperature. Then place in fridge for 10 minutes.

    You want it to set up just a little so that the gold flakes will stay afloat better in the shots and not just sink to the bottom which will happen if you pour them while hot/warm.

    Pour into molds or cups depending on what you are using. If using ramekins you will need to spray with baking spray or grease with butter to help them come out better.

    Keep in fridge covered for 4 hours. If using ramekins you will need to run a sharp knife along the edge to help loosen the sides.
