  • Make the most of fresh peaches with this mimosa. It’s the time of year when the late summer produce begins piling up in my kitchen, making me a tad bit stressed. Not stressed in bad way, just that I won’t be able to use all of the glorious produce before it starts to spoil. Around here it’s Palisade Peach time and they’re just hitting their peak, so I’m always looking for new and exciting ways to cook and bake with them. Today I made these super fun, refreshing and delicious peach beer mimosas. These cute cocktails are so easy to make and perfect for game day entertaining. Just make a quick peach simple syrup, mix it with your favorite lager beer, and drink up! Slowly pour the beers into one large pitcher or between 4 large glasses. Add the peach syrup and stir to combine. Serve with a peach wedge and enjoy immediately!

Ingredients

  • 3 ripe peaches, sliced + more for garnish
  • 1 cup sugar
  • 1 cup water
  • 4 (12 oz.) lager beers

Instructions

    Place the peaches, sugar and water in a large saucepan and bring to a boil. Simmer until the peaches are soft and have released their juices, about 5-10 minutes.

    Strain the mixture through a fine mesh strainer, discard the peach pulp and place the peach syrup in the fridge until well chilled, at least 1 hour.

    Slowly pour the beers into one large pitcher or between 4 large glasses. Hold pitcher or glasses at angle to minimize froth. Add the peach syrup and stir to combine. Serve with a peach wedge and enjoy immediately.
