A tropical spin on a jello shot. Pineapple juice and coconut flavored rum make you think that you are sitting on the beach on a tropical island.
Pineapple Coconut Jello Shots

Ingredients
- 1 cup pineapple juice
- 2 envelopes plain gelatin
- 1 cup coconut-flavored rum
- 1/4 cup toasted coconut
Instructions

Step1Add the pineapple juice to a saucepan, sprinkle the gelatin over the juice. Let it sit for 2 minutes.

Step2Heat the pineapple juice over low heat, stirring, until the gelatin has dissolved, about 5 minutes.

Step3Stir in the coconut rum. Pour into a 8x8 pan.

Step4Refrigerate until set, about 4 hours.

Step5Cut into squares and dip the bottoms into the toasted coconut. Serve immediately.
