Bright and glorious rainbow-chip pancakes, studded with all the stuff you love! Now you can pull on your footie pajamas, grab a giant fork, and just… let it go. Because these pancakes will be there to wallow with you all the way.They don’t just turn your cake batter into rainbow-color-studded pancakes. They also arrive with layers of Nutella. And peanut butter. And ... Nutella! The holidays may be over, and you might not have gotten what you wanted or expected. But at least you have these magnificent pancakes!Then these pancakes go and top themselves with whipped cream, chocolate chips… CRISPY BACON. CRUSHED POTATO CHIPS. WHIPPED CREAM. You’re feeling better already, aren’t you? And, of course it’s all topped with a cherry. Because, life. And bowls. And – ohhh – you know. The season may be over, but the year of goodwill is just beginning. No more pity, my love. It’s pancakes for you. Layers and layers of splendid, perfect Pity Pancakes. Whoever said the end of the holidays is a bad thing clearly hasn’t put potato chips, chocolate, peanut butter, Nutella, whipped cream and BACON on their pancakes. All together. The end.

Ingredients

  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup from 1 box Betty Crocker™ Delights Super Moist™ Party Rainbow Chip Cake Mix
  • 1/2 cup Baileys™ Irish Cream
  • 1 egg
  • 1/2 cup chocolate-hazelnut spread (like Nutella®)
  • 1/4 cup peanut butter
  • 1/2 cup wavy potato chips, crushed
  • 1/4 cup diced bacon
  • 1 cup whipped cream
  • 1/4 cup chocolate chips
  • 2 tablespoons rainbow sprinkles
  • 1 tablespoon toffee bits
  • 1/2 cup maple syrup
  • 2 Maraschino cherries
  • Nonstick cooking spray

Instructions

    In a medium bowl, whisk together Bisquick, cake mix, Irish cream and egg. Pour 1/4 cup of batter into a medium-hot griddle that has been generously coated with nonstick cooking spray. Cook both sides until golden brown.

    Plate the pancakes, adding hazelnut spread and peanut butter between the pancakes. Top with potato chips, bacon, whipped cream, chocolate chips, sprinkles, toffee bits and maple syrup. Serve with whipped cream and a cherry on top.
