Which is why, we thought it an irresistible task to come up with a recipe for Rainbow Popcorn Balls, where every color is patted together into a perfect sphere. Kinda like the world as we see it. Only edible. The ones we made are the size of a grapefruit, but you can make kid-friendly, two or three-bite balls, if you want! And just like that… welcome to the Wonderful Land of Rainbow Popcorn. Rainbow Popcorn Balls

Ingredients

  • 2 sticks butter
  • 1 bottle (16 oz) light corn syrup
  • 1 1/2 cups sugar
  • 20 cups popcorn, popped
  • 6 packets unsweetened, powdered drink mix (like Kool-Aid)

    In a large pot, melt butter, corn syrup, and sugar together over medium heat until boiling. Allow to boil for 2 minutes (or until the mixture reaches a soft ball stage), then remove pan from heat.

    Separate popcorn evenly into six bowls or large paper bags. (Note: A fast way to pop the popcorn is to place 1/2 cup of uncooked seeds into a large, brown grocery bag. Roll the top of the bag down several times, then microwave it for 3-4 minutes. 3-4 batches should be enough to yield the 20 cups needed for this recipe. Be sure all unpopped popcorn seeds have been removed by lifting the popped popcorn out of the bag, and into a large bowl with your hands. Don't just dump the bag into a bowl!)

    Working quickly, whisk 1/2-1 teaspoon of drink powder into 1/3 cup of the corn syrup mixture. Drizzle over each bowl of popcorn and toss until coated in color. Don't worry if the popcorn is completely coated with this sugary sauce. You're going to pour a final coat over everything before forming them into ball!

    Once all bowls of popcorn have been tinted with the colored drink and sugar mixtures, pour all the colored popcorn back into the pot, and toss with the remaining corn syrup mixture. The popcorn should now be very well coated with the sugar mixture.

    Wet your hands slightly with cold water. Working quickly, gather together a cup of popcorn and press it gently together to form a ball. Place balls on a parchment-lined baking sheet and allow to cool. Cover each ball with plastic wrap to store, or eat immediatey and enjoy!
