  • One of my favorite things about summer (along with plenty of warm weather, sunshine, potlucks, trips to the beach, etc.) is the variety of fresh produce that is in season.

    Nearly every week, a new fruit or vegetable sprouts anew from the ground and is available in local farmers markets and groceries. Now, I know that most fruits and veggies are prevalent year-round, but the taste of an in-season peach or asparagus is incomparable to one available in January.

    I know it’s a tad late in the season for strawberries, but there is still a flavorful abundance of them at the local grocery store (and depending on where you live, at farmers markets, too). Whenever I have an extra handful (or basketful, or boxful) of fruit on hand, one of my favorite things to make is granitas. And one of my favorite varieties is this Strawberry Granitas recipe.

    Granitas are one of the simplest treats to make in the summer. They’re icy cool and sweet, made with sugar and fresh fruit. It’s like a cross between sorbet and a snow cone, but you don’t need to wait for the ice cream truck to drive by to enjoy this refreshing dessert in your own backyard. All you need are strawberries (or a few cups of your favorite fruit), some sugar, some lime or lemon juice and a little bit of patience. In just a few hours, you’ll have a tasty treat.

    I like a strong lime flavor in my granitas, so I add the maximum amount of lime juice, but you can use as much or as little as you want depending on your preference. Fresh, in-season fruit won’t be around forever, so make this yummy summer dessert while you can!

Strawberry Granitas

Ingredients

  • 3/4 cup sugar
  • 1 cup hot water
  • 2 tablespoons lime juice (add more if you want a more limey, tart flavor)
  • 3 cups chopped strawberries

Instructions

    Pour sugar, hot water and lime juice into a blender. Blend to dissolve sugar. Add chopped strawberries and blend until combined.

    Pour mixture into a 9 x 9-inch baking dish and place in freezer, uncovered, for exactly one hour.

    Remove from freezer and, with a fork, stir the slush (mash chunks with the back of the fork). Cover with aluminum foil and let freeze for 2 hours. (At this point, you can re-cover the mix and keep in the freezer for up to 3 days. Just be sure to stir again with a fork before serving.)

    Remove from freezer and scrape frozen mixture with the teeth of a fork until a crystallized slush mixture forms. Scoop into glasses and serve.
