This quick and easy taco bake casserole is "crazy" good!

     I know you all love tacos.

    And I’m pretty sure that anytime I mention that a recipe takes 15 minutes of prep, everyone is suddenly very interested.

    So, people – you’re going to love this Taco Loco Bake! It includes all of the yummy taco ingredients that you love, but this time they’re layered to make a simple casserole (or “bake”) that you can throw together in a snap. And then get ready because it may also disappear just as quickly.

    Here it is!

    First we begin with the ground beef. Brown it, baby!

    Then once it’s cooked and drained, add in some diced tomatoes, green chiles and some taco seasoning. Yum.

    Transfer the mixture into a greased baking dish for layer Numero Uno.

    Then start layering! Add in a layer of sour cream then black beans.

    Then queso (shredded cheese).

    Then my favorite layer – some yummy tortilla chips!

    Bake it up for 30 minutes at 350 until that cheese is nice and melted.

    Then serve it up!

    So many layer of goodness. Muy delicioso!!!

Ingredients

  • 1 pound ground beef (hamburger)
  • 2 tablespoon taco seasoning
  • 1 (14 oz) can Muir Glen™ diced tomatoes
  • 1 (4 oz) can diced green chiles
  • 1 1/2 cups sour cream
  • 1 can black beans, drained and rinsed
  • 2 cups shredded cheese (Mexican blend or Monterrey Jack)
  • 2 cups crumbled Food Should Taste Good™ multigrain tortilla chips

Instructions

    Preheat oven to 350°F.

    Heat ground beef in a large skillet over medium high heat until browned, stirring and breaking the meat up with a spoon as it cooks. Once the meat is browned, remove and drain.

    Return skillet to heat, and stir in the diced tomatoes and green chiles. Transfer mixture to a greased 9x13-inch baking dish, and spread the mixture evenly across the bottom of the pan.

    Use a rubber spatula to spread the sour cream in an even layer on top of the ground beef mixture. Then add an even layer of black beans, then a layer of shredded cheese, and finally a layer of the crumbled tortilla chips.

    Bake for 30 minutes or until the cheese is melted. Remove and serve immediately.
