  • Granola bars are the best thing to happen to ice cream sandwiches since the ice cream sandwich was invented (which, by the way, was by a street peddler in New York City in 1899). To be more specific, Nature Valley™ Granola Thins Crispy Squares—with a bonus layer of chocolate—are the best thing to ever happen to ice cream sandwiches. The bars are thin and crunchy enough to bite through easily, but sturdy enough to hold the ice cream in place. It’s the perfect crunchy-sweet combo. Plus, it’s better for you than using cookies. And granola bars give you energy, right? I wish I had thought of this combo years ago! Cover and freeze your easy granola bar ice cream sandwiches at least 30 minutes or up to a week.

Ingredients

  • 1 1/4 cup ice cream, any assortment of flavors
  • 1 package (6 oz.) Nature Valley™ Granola Thins Crispy Squares
  • Chopped nuts, mini chocolate chips or sprinkles (optional)

Instructions

    Scoop 1/4 cup ice cream on the chocolate side of a granola square. Top with another granola bar, chocolate side down, and gently press. If desired, dip the ice cream edges in sprinkles, chopped nuts or mini chocolate chips.

    Place the ice cream sandwiches in a container lined with wax or parchment paper. Cover and freeze for at least 30 minutes, up to one week.
