Slow-Cooker Beef Stuffed Pepper Soup

Ingredients

  • 1 lb ground beef (at least 80% lean)
  • 1 cup finely chopped onions
  • 1 medium carrot, cut in half lengthwise and thinly sliced (about 2/3 cup)
  • 1 medium green bell pepper, coarsely chopped (about 1 1/3 cups)
  • 1 medium orange or yellow bell pepper, coarsely chopped (about 1 1/3 cups)
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1 can (15 oz) Muir Glen™ organic tomato sauce
  • 1 carton (32 oz) Progresso™ chicken broth
  • 1 tablespoon Montreal steak seasoning
  • 1 teaspoon sugar
  • 3/4 cup uncooked instant white rice
  • 1 cup shredded white Cheddar cheese (4 oz)
  • 2 tablespoons finely chopped fresh parsley

    Spray 5-quart slow cooker with cooking spray.

    Add beef and onions to 10-inch skillet, breaking beef into small pieces. Cook over medium-high heat 7 to 9 minutes, stirring frequently, until beef is brown; drain. Add beef mixture to slow cooker with carrot, bell peppers, tomatoes, tomato sauce, broth, seasoning and sugar; stir to combine. Cover; cook on High heat setting 2 to 2 1/2 hours or until vegetables are crisp-tender. Stir in rice; cover, and cook about 20 minutes longer or until soft.
