  • Have you jumped aboard the coconut milk and coconut water craze? How about the coconut oil craze? I swear, I don’t know a single person without a tub of coconut oil in their house at this point! Like any good little minion who jumps on board with all the trends, I love the stuff. I use the oil in cooking and as lotion. I’ve yet to brush my teeth with it, but I know people that do. And coconut water? Well, we drink the stuff like it’s going out of style. And now we’re making pancakes with it! Because, hey, why not? Cook ‘em up and top with syrup! I like to drown mine, but you do you. The pancakes are just as light and fluffy as you’d want, but they soak up all that coconut water flavor. Such a fun surprise in a pancake!

Ingredients

  • 2 cups Original Bisquick™ mix
  • 1 cup coconut water
  • 2 eggs

Instructions

    Heat griddle over medium heat and spray with non-stick spray.

    Add all ingredients to a medium mixing bowl and whisk to combine, being careful not to overmix.

    Pour 1/4 cup batter onto griddle and cook until edges are dry.
  • Step

    Flip pancake and continue cooking until golden and cook through. Repeat with remaining batter.
