Yeast Pancakes

This unique pancake batter is yeast-based and rises before you cook the pancakes on a griddle.
Yeast Pancakes

Ingredients
- 3 cups warm milk
- 2 teaspoons yeast
- 3 eggs
- 1 teaspoon salt
- 1/4 cup oil
- 3 cups flour
Instructions

Step1Combine warm milk (lukewarm, not hot) and yeast. Let stand so yeast activates.

Step2Combine all ingredients, adding milk/yeast and dry ingredients alternately. Mix with electric mixer until batter is smooth.

Step3Place batter in a large pan or bowl with enough room for batter to rise. Cover with a towel. Let batter stand in a warm place until bubbly, about an hour, stirring once about half way.

Step4Cook pancakes on oiled griddle. ENJOY!

Step5Note: Leftovers can be refrigerated and reheated in the microwave later. Great kids snack with peanut butter!

Step6This recipe will feed a family of four. I double it for my family of six and have leftovers for quick weekday breakfasts or after-school snacks. Wonderful with maple syrup or blueberry syrup!
